Organoleptic characterization and PAH content of salmon (Salmo salar) fillets smoked according to four industrial smoking techniques

چکیده
Four industrial processes for smoking food were studied through their effects on the organoleptic properties of smoked salmon and on the occurrence of 20 polycyclic aromatic hydrocarbons (PAHs) known as being contaminants of smoking processes. The contamination by PAHs of the food might be measured by their corresponding toxic equivalent quantity (TEQ) expressed in μg kg-1. The results show a significant correlation between the smoking process parameters, the odour of the smoked fish and the presence of PAHs. Smouldering, thermostated plates and friction smoking processes allow smoked fish with very close odorant characteristics to be obtained. However, differences of pyrolysis temperature (between 380 and 500 °C) causes significant differences of PAHs concentration even if the contents are under the legal threshold concerning benzo(a)pyrene (5 μg kg-1). Smoked fish obtained by liquid smoke vaporisation presented the lowest level of PAHs but benzo(a)pyrene concentration is nevertheless important. The odours brought by the liquid smoke process are more cold smoke and vegetal/green than the other techniques, which are smokier and fishier. Copyright © 2007 Society of Chemical Industry.

Computer vision-based sorting of Atlantic salmon (Salmo salar) fillets according to their color level.
Computer vision method was used to evaluate the color of Atlantic salmon (Salmo salar) fillets. Computer vision-based sorting of fillets according to their color was studied on 2 separate groups of salmon fillets. The images of fillets were captured using a digital camera of high resolution. Images of salmon fillets were then segmented in the regions of interest and analyzed in red, green, and ...
متن کاملDetermining the effect of different cooking methods on the nutritional composition of salmon (Salmo salar) and chilean jack mackerel (Trachurus murphyi) fillets
The effect of four cooking methods was evaluated for proximate composition, fatty acid, calcium, iron, and zinc content in salmon and Chilean jack mackerel. The moisture content of steamed salmon decreased (64.94%) compared to the control (68.05%); a significant decrease was observed in Chilean jack mackerel in all the treatments when compared to the control (75.37%). Protein content in both sa...
متن کاملEffect of chitosan-based coatings on the shelf life of salmon (Salmo salar).
This study aimed at determining the effect of chitosan coating on shelf life extension of salmon ( Salmo salar ) fillets. The success of edible coatings depends highly on their effective wetting capacity of the surfaces on which they are applied. In this context in a first stage the surface properties of salmon fillets and the wetting capacity of the coatings on fish were evaluated. In terms of...

The CEM rapid extraction method for lipid content determination was compared with official standard methods and was found to give accurate results for individual samples, taking approximately 8 min per sample. The study involved the lipid analysis of 47 white muscle samples from six fillets of farmed Atlantic salmon, using both the CEM and the Soxhlet method, in order to evaluate the performanc...

A digestibility trial was conducted to examine the effect of feeding rate on dry matter, gross energy, crude protein and phosphorus digestibility in Atlantic salmon (Salmo salar). Duplicate groups of fish were fed 0.25, 0.5, 0.75, 1.0, 1.25 and 1.9% BW/day. The faeces were collected by Guelph-type collectors for five successive days. Dry matter, protein and phosphorus digestibility’s were all s...
